Think of dried grapes on a vine, still very much healthy, only dehydrated, concentrated. This is not a tasting note. This is the material used in this captivating dessert red, traditionally called by name today forbidden (Prošek). This nectar from dried berries from bunches left on the vine is aromatically more like chewing raisins than drinking wine. Because everything is preserved. The experience could not be more intense if you’re standing in a vineyard on the island of Vis, and eating grapes.
The paradox is – it is also juicy and very much vinous. That is the only “problem”. You can’t stop “eating”.
The transformation from skeptical taster unaccustomed to sweet stuff, to pleasure junkie happens in an instant. Even when chilled, the tannins do not bite. Even warmed up, alcohol does not sting.
