It is a wine made by classic methods from Malvazija, Chardonnay and Istrian Plavina. The style of the wine defines Plavina, adapted for the production of sparkling wines because it does not achieve a significant concentration of sugar. Still, it has a high acidity, giving extraordinary conditions to produce this kind of wine. Grapes are handpicked. Malvazija and Chardonnay are directly pressed after fermentation and added to Plavina and then macerates together for a few days. After pressing, the rest of the fermentation finishes in inox barrels and then wine ages a year, part in inox, part in wooden barrels. After one year, before bottling young wine is added to start fermentation in the bottle. The wine is aging two years in the bottle on its own sediment after which it is disgorged without any added liquor.
