Čotar wines are recognized by their fingerprint labels, as the winemaker’s symbolic signature. Čotar stands for rigorously hands-off approach, making the non-added-sulphur wines. This is the possible outcome of proper wineyard work and handling wines in order to express themselves. The wines are deliberately not filtered as sediment occurs naturally as a result of skin contact during spontaneous fermentation in large neutral barrels.

Bela is traditional bottle-fermented sparkling wine that hasn’t been fined or filtered. Despite the elegant petillance, wild energy rushes through this bubbly interpretation of Vitovska from first sip till last. Apricot, pineapple, white flowers dominating the fruit aspect while yeasty and mineral undertones have the final word. Not heavy od difficult in any moment, easy drinking but highly memorable.
