Primis is the young olive oil of the Aurum Salvela selection. It is, of course, a blend of indigenous Istrian varieties from our olive groves, with particular emphasis on Leccino and Pendolino, which in their earlier stage provide pleasant organoleptic characteristics. Buža, Rošinjola, and Bjelica bring vibrant fruitiness and freshness, accompanied by distinct bitterness and spiciness, while the introduced varieties in their early development gently round out and balance the typical “wild” character of young extra virgin olive oil. Primis is therefore of medium intensity, revealing aromas and flavors of green leaves, green almond, chicory, and tomato. Salvela Primis can be served in vegetable soups, stews, and with boiled fish. Among sweet dishes, it pairs well with carrot and pumpkin cake, apple cake, pear cake, andother autumn fruit desserts. Salvela Primis is also recommended with young goat, cow, or sheep cheese, served with a slice of warm homemade bread.
